Green Papaya Salad
Prep Time: 15 minutes
Cook Time: 5 minutes
Servings: 4 people
Tip: This salad is best enjoyed fresh as the papaya can become mushy after a while.
Ingredients
- For the Salad:
- 1/2 green papaya, grated
- 1-2 cucumbers, thinly julienned (use a potato peeler for ribbons)
- 1 carrot, thinly julienned (use a potato peeler for ribbons)
- 1/2 purple onion, thinly sliced
- 2 tomatoes, diced
- 2 mangoes (optional), thinly julienned (use a potato peeler for ribbons)
- Handful each of fresh basil, cilantro, and moringa leaves
- For the Creamy Dressing:
- 1 tablespoon sesame oil (or neutral oil like canola or vegetable)
- 2 cloves garlic, minced
- 2-3 pieces turmeric (fresh or ground)
- 1-2 pieces ginger, minced
- White part of 1 spring onion, chopped
- 3-4 sprigs lemon grass, chopped
- Salt and pepper to taste
- 1/2 teaspoon paprika
- Optional: Chopped chilies (to taste)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon dried oregano
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar or honey
- 1 tablespoon rice vinegar
- 1 tablespoon fish sauce
- 2 tablespoons lime juice
- Handful of peanuts
- For Garnish (Optional):
- Chopped green onion
- Toasted sesame seeds
- Extra basil or cilantro leaves
- Whole toasted peanuts

Instructions:
- Make the Salad: In a large bowl, combine grated papaya, julienned cucumber and carrot, sliced purple onion, diced tomatoes, and optional mango. Add a generous amount of fresh basil, cilantro, and moringa leaves. Toss to combine and set aside.
- Make the Creamy Dressing: Heat sesame oil in a small saucepan over medium heat. Add garlic, turmeric, ginger, and white part of the spring onion. Sauté for a minute until fragrant.
- Add chopped lemon grass, salt, pepper, paprika, and optional chopped chilies. Sauté for another minute until lemon grass softens.
- Stir in ground cinnamon, oregano, and soy sauce. Cook for 30 seconds, then turn off the heat. Let cool slightly.
- In a blender or NutriBullet, combine cooled sauteed mixture, peanuts, brown sugar/honey, rice vinegar, fish sauce, and lime juice. Blend until smooth and creamy.
- Taste the dressing and adjust seasonings as needed (more salt, lime juice, etc.).
- Pour the creamy dressing over the prepared salad and toss to coat.
- Garnish with chopped green onion, toasted sesame seeds, extra basil/cilantro leaves, and toasted peanuts (optional). Serve immediately.
